For this effect I'm using the iPhones HDR setting. I tap the screen where there's big highlights- the clouds in this case- to make sure that they don't get over exposed. Then in edit I push the slider for shadow to the right, lightening the shadows and the slider for the highlights to the left to darken them. I fool with the other sliders to get a well balanced image. Then I use the saturation control in the colour section to increase the colour, well saturation.
